500 g fresh ricotta 200 g grated cheese (niva, mozzarella, goat, sheep, bryndza.1 KL salt 4 pcs egg 200 ml sour cream to taste herbs to taste Vegetable Recipes (spinach, asparagus, zucchini, beetroot, tomatoes, peppers, aubergine…)

The traditional savoury quiche (read quiche) covered with various savoury goodies undisputedly belongs to the throne of French cuisine. It used to be the food of the common people in particular, and they usually used whatever the larder gave as ingredients. But a good quiche can be enjoyed by everyone, regardless of social status.

The base is the dough: I confess, if I don’t have time, I sometimes use puff pastry. I buy gluten free or multigrain. The French would probably kill me for that, so to justify it, I’ll offer you a recipe for a fantastic pastry that is definitely more like the original. If time permits, give it a try, you won’t regret it.

Prepare the dough by hand by mixing all the ingredients. Let it sit in the refrigerator for 30 minutes. Prepare a quiche tin (diameter 28 cm), grease with butter and place the rolled out dough in it, pressing the edges as well. Bake in a preheated oven for 10 minutes at 180 degrees

Mix all ingredients with a stick or stand (smoothie) blender. If you want the filling green, blend in spinach, if you want it red, blend in 10 dried tomatoes without oil, if pink, add one beetroot to the ingredients in the blender, if yellow, add a tablespoon of turmeric.

Pour the cream on the pre-baked dough. Top with fresh Vegetable Recipes such as zucchini slices, asparagus, cherry tomatoes, beetroot, red onion and sprinkle with seeds (pumpkin, sunflower, etc.) Bake in a preheated oven at 150 degrees for 30 minutes until golden, turn off the oven and leave to cool. Cut into 8 pieces. Enjoy!
