Sautéed shimeji mushrooms in brine
ingredients
250 g shimeji mushrooms 2 tbsp soy sauce 1 tbsp rice vinegar 1 pk chili pepper 1 handful fresh coriander

1. Fry the shimeji mushrooms in a pan with oil for 2 minutes. 2. 3. Add soy sauce, rice vinegar, chopped chili pepper and a handful of cilantro. 4. Stir. Refrigerate the mixture overnight (about 12 hours). 5. Serve alone with ginger, or add to any Asian soup (ramen, pak choy, etc.).
