Last Updated on
Ingredients:
1. 1/2 cup heavy cream
2. 1/4 cup grated Parmesan cheese
3. 1/4 teaspoon salt
4. 1/4 teaspoon ground black pepper
5. 1 tablespoon butter
6. 2 tablespoons all-purpose flour
7. 2 cups milk
8. 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
9. 1/2 pound uncooked penne pasta
10. 1 (16 ounce) package shredded mozzarella cheese
Instructions:
1. Preheat oven to 375 degrees F (190 degrees C).
2. Combine cream, Parmesan cheese, salt, and pepper in a small saucepan over medium heat. Cook, stirring constantly, until cheese is melted and mixture is slightly thickened, about 5 minutes. Set aside.
3. Melt butter in a large saucepan over low heat. Stir in flour, and cook until mixture is smooth, about 2 minutes. Gradually add milk, whisking constantly until mixture is smooth, about 5 minutes. Raise heat to medium, and cook until mixture comes to a boil and thickens, about 5 minutes more.
Remove pan from heat, and stir in spinach, penne pasta, and mozzarella cheese. Pour into a 9×13 inch baking dish.
Bake in preheated oven until bubbly and slightly browned on top, about 20 minutes
