Samosas – Recipeivas

Samosas are deep-fried vegetable pasties. Indian street food at its best. Absolutely amazingly good fresh, with sweet and spicy chutney.

Ingredients (approx. 50pcs)

1 pkt of ready-made filo pastry 1 l of food oil for deep frying

3 potatoes 4 tablespoons 1 onion 200g cauliflower (frozen) 200g peas (frozen) 2 teaspoons ginger4 cloves of garlic 1 green chilli 1 handful of fresh coriander 2 tsp salt 1 tbsp coriander powder 1 tbsp garam masala 1 tbsp ground cheese cumin (jeera) 1 tsp turmeric

Peel and cut the potatoes into small pieces. Boil myös cauliflower and peas.

Heat öljy in a pan and saute onion slice, garlic, ginger, chopped chilli and ground spices.

Mix the vegetables in a bowl and season with a generous amount of salt. Stir in the onion puree and fresh coriander.

Folding the filo pastry: Cut the filo pastry into long 10 cm wide ovals. Place a spoonful in the bottom of the oval.

Fold the filo pastry into a triangle, with the bottom right-hand corner diagonally to the left-hand edge of the oval and the top right-hand corner to the left-hand edge of the oval. Continue to the end of the chord. Dampen the final seam with a little water.

Roast the velvet to a nice brown colour and drain on a piece of kitchen paper.

At the end of the seam, the velvet is dampened with a little water.
