Salty zucchini pie with cheese and bacon (or other cold cuts)

Have you tried zucchini in all ways and overeaten it during the season? Then try the irresistible combination with cheese, bacon and eggs. Also suitable for breakfast or snack!

Prepare the ingredients and preheat the oven to 170°C.

Shred the washed and dried zucchini with the skin into thicker slices. Add the chopped or grated onion.

Beat the eggs to form one whole. Slowly add the flour to the eggs and incorporate. If you don’t have self-raising flour, you can substitute it by mixing 150g of plain flour, 1.5 teaspoons of baking powder and a pinch of salt.

Add the zucchini, onion and mix.

Now add bacon (for a milder alternative, good quality sausages or smoked tofu), cheese and oil to the mixture.

Mix everything thoroughly to form a homogeneous mass.

Grease a baking tray or baking dish and dust with flour. Pour the prepared mixture into the bowl.

Bake in the oven for approximately 30 minutes.

Let cool slightly and you can slice and serve. Enjoy!
