We think that this rainy day is particularly suited to a summery and light recipe. It’s been a long time since we’ve made a good saltfish dish, and now is the perfect time to do it. So today we’ve made a salted fish casserole with hot potatoes and dill.

Our time has shown that once you’ve got a craving for salted fish, it’s often the case that no one has the energy to salt it themselves. Fortunately, our favourite M.V.Wool, or Mati Kalapoe, has excellent salting techniques and tools and their salted fish never disappoints – whether it’s salmon, trout, herring or salted sea bass.

M.V.Wool uses a dry salting method to ensure the best taste and quality of the products, which brings out the best flavours and consistency of the fish. The salted fish products are available sliced or whole on the skin.

The recipe itself is quite simple and perfect for the summer ahead. Apparently I’m not the only one who immediately conjures up an image of grandma’s garden and a summer holiday with hot potatoes, dill and salted fish. Our chosen savoury is also easy to prepare. Take it out of the packet, slice it and put it on a plate! Then boil the potatoes, add a fresh salad if you like, and a delicious meal is ready.

Serve with a sprinkle of dill to taste and garnish the potatoes and fish!
