Salted butter caramel palmiers with Thermomix
Here is the recipe for salted butter caramel palmiers with Thermomix,sweet palmiers flaky, crispy and caramelized, easy and simple to relaiser for the snack.
Ingredients:
250 g flour 250 g frozen butter pieces 100 g water 100 g brown sugar 3 tablespoons salted butter caramel 1 tablespoon powdered sugar 20 g melted butter
Preparation:
Prepare the puff pastry, put the flour, butter and water in the bowl and then mix for 40 seconds at speed 6.
Then mix 10 seconds at speed 6 / reverse direction.
Roll out the dough into a rectangle,on a floured work surface.
Fold the rectangle into 3, the bottom third, then the top third over the center part.
Turn the dough a quarter turn to the left then repeat 4 times, turning each turn the dough to the left.
Cover the dough then chill for at least 30 min before using.
Spread the puff pastry into a rectangle then sprinkle with brown sugar then press down lightly to aerate the brown sugar.
Then turn the dough over then sprinkle with the remaining brown sugar, and press lightly.
Arrange the salted butter caramel with a tablespoon, forming zig-zags in both directions.
Roll the 2 sides of the dough towards the middle to obtain 2 puddings then place in the freezer for 15 minutes.
Cut the pudding into 1 cm wide rounds then place on a baking sheet covered with baking paper.
Brush the surface of the palms with melted butter and sprinkle with sugar.
Preheat the oven to 180°C and bake for 10 minutes then turn the palms over and bake for another 10 minutes.
