Salsa rossa

Instead of “ordinary” ketchup, make traditional homemade Italian red sauce “salsa rossa” at home! It is easy to prepare and goes well with grilled salsa and grilled or boiled meat.

Ingredients:

500 ml passata 2 cups olive oil 2 cups of wine vinegar 4 tablespoons

2 tbsp tomato puree 2 pcs garlic cloves 1 pc pepperoni 1 pc small celery 1 pc carrots

Procedure:

Cook two glasses of wine vinegar for about 5 minutes, add four tablespoons of sugar and 500 ml of tomato passata pre-heated with oil, garlic cloves, hot pepper, minced celery and carrots.

Add a little tomato puree and cook for about 30 minutes until thickened.

Rosé with an immersion blender, after removing from the stove add the basil leaves.
