Salsa recipe to go with vegan taco salad

This salsa recipe is the perfect thing to go with a vegan taco salad.
Ingredients:
1 can (15 oz) black beans, drained and rinsed
1/2 cup finely chopped red onion
1 medium tomato, seeded and finely chopped
1 small jalapeño pepper, seeded and finely chopped
2 tablespoons chopped fresh cilantro
1 tablespoon red wine vinegar
1 tablespoon olive oil
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions:
1. In a medium bowl, combine all ingredients.
2. Cover and refrigerate for at least 1 hour, or up to 24 hours, to allow the flavors to blend.

This salsa is great on tacos, burritos, nachos, or just as a dip with chips. It’s also perfect for a vegan taco salad. Just add some chopped lettuce, tomatoes, avocado, and vegan sour cream or cheese. Yum!
