Salmon Creole style

ingredients

1/2 tbsp olive oil 1 pk onion 400 g tomato 1/2 tbsp chopped thyme 1 pk bay leaf a little chopped parsley to taste salt to taste whole black pepper 4 pk salmon fillets 1 pk lemon

procedure

Heat the oven to 200 degrees. In a large frying pan, fry the onion in the oil. Add the chopped tomatoes, thyme, bay leaf, parsley, salt and black pepper. Cover with a lid and simmer for about 15 min.

Place the salmon pieces in a baking dish. Pour the lemon juice over the top, spoon the tomato mixture on top. Place in the oven and bake for about 20 to 30 min or until the salmon is tender.

Before serving, remove the bones from the fish and garnish with parsley. Serve with rice and steamed Vegetable Recipes.
