Summer Salad
We’ve rounded off June with a summer salad in the Recipe Drawer. Namely, we made a mango and avocado sizzling salad, which not only tastes good but also looks very subtle. Preparing it for a summer garden party, you are guaranteed to surprise your guests. It’s a summery, light salad that’s perfect as a starter to a larger feast or as a snack between meals.
A little more about the surimi. Surimi (widely known in Estonia as macaroni or crab sticks) originated in East Asia and the word itself means minced meat in Japanese. There, it is usually fish, not crab sticks as in the West. The earliest sources of surimi date back as far as the 11th century, so it has a long history. Surimi, which imitates crabmeat and is well known in the West, began to be popularised around the world in the 1960s, when Japan developed its mass-production capacity.
For the surimi, we chose the high quality VIČI Surimi sticks Surimi Kama. VIČI is one of the leading fish and seafood producers in Europe and we believe they produce the best surimi available in Estonia. Often the surimi sticks sold in the shops can be of quite poor quality, but when you buy VIČI crab sticks you can always be sure of quality. The salad would have been delicious with other VIČI chopsticks, but we opted for Surimi Kama chopsticks because they break down into fine strips under light pressure.
