Salad with beans and black rice

I made this salad with ingredients I always have at home and on hand, we love it and I make it quite often – the combination of black rice and peanut butter is really interesting and as a bonus it’s healthy too…

Prepare all the ingredients. I use green lettuce, preferably oak or little gem, both radicchio, sundried tomatoes, cherry – but to each their own taste. I use mostly canned beans, but sometimes I’ll use soy, beans, plain other legumes. I use crunchy peanut butter, that’s what I like, but of course it can be plain too. Lime goes into the recipe, but it can be substituted with white balsamic vinegar, for example…

Cook rice and legumes. Wash the Vegetable Recipes and put them in a bowl. Add the cooled legumes and rice.

Put about 2 tablespoons of peanut butter in a blender, add 2 tablespoons of soy sauce, salt, pepper, add lime or balsamic vinegar, if you like it spicier, add chili, pour extra virgin olive oil and water… Blend until smooth. The mixture should be thinner, if it seems stiff, add water and blend. The dressing tastes better if it is a bit cold in the fridge, but if you are hungry, it can be eaten right away :-))).

Add to the salad and mix. It’s a great dish for lunch too – legumes are healthy and are a valuable source of protein, black rice is interesting in taste and is a better choice than white rice, and the dressing is just the finishing touch :-))) Enjoy.
