Sacher’s cake

6 pcs eggs 210 g butter 210 g powdered sugar 210 g high quality dark chocolate 165 g plain flour 2 packets vanilla sugar 1/2 packet baking powder apricot jam 200 g Crystal sugar for the glaze 125 ml water 150 g dark chocolate for the glaze

Melt the chocolate in a water bath and add the oil. Separate the egg whites from the yolks. Beat the egg yolks with the butter and icing sugar and gradually add the cool chocolate

Beat the egg whites with the vanilla sugar until thick and carefully add to the chocolate homot.

Mix the baking powder with the flour and carefully incorporate into the batter.

Prepare a baking tin . Put paper on the bottom, grease the sides and dust with flour. Pour in the batter and place in a preheated oven at 160 C.

Cut the baked and cooled cake in half, spread with apricot jam and prick with a fork. Cover with the other part. The top can be cut to remove the crust and to have just a soft dough.

Melt the chocolate for the icing in a water bath. Boil the water with the granulated sugar . It must boil to dissolve the sugar. Combine the sugar water with the chocolate and mix well. Pour the icing over the cake and leave to set.
