Rye pancakes

300 g wholemeal rye flour 20 g baking powder 4 tbsp cane sugar 1 tbsp vanilla sugar 1 tbsp vanilla extract 515 ml semi-skimmed milk 2 pcs egg 50 g butter 1 pinch salt to taste fruit

1. In a bowl, mix the sifted flour with the baking powder and a pinch of salt. In another bowl, whisk together the eggs, milk, both sugars, vanilla extract and stir in the crumbled flour mixture. Finally, add the cooled melted butter and mix everything together. 2. In a hot frying pan with a little oil or butter, progressively pour about 3 tablespoons of batter, turn the pancake after 3 minutes, finish baking on the other side and progressively bake all the batter into pancakes. Serve with fresh fruit, cottage cheese or maple syrup, for example.
