Ingredients:
1 chicken skin
1/2 cup chopped onion
1/4 cup chopped celery
1/4 cup chopped carrot
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup uncooked rice
1/2 cup water
1/4 cup chopped parsley
Instructions:
Preheat oven to 375 degrees F (190 degrees C).
In a large saucepan, sauté onion, celery, carrot, garlic, salt, and pepper in 1 tablespoon of butter until vegetables are tender.
Add rice and water. Bring to a boil, reduce heat, and simmer for 10 minutes.
Remove from heat and stir in parsley. Cool slightly.
Spoon rice mixture into chicken skin. Place in a baking dish and bake for 20 minutes, or until chicken skin is crispy.
