Rösti (Swiss potato pancakes)

800 g potatoes 2 tbsp oil 1 tbsp butter 1 pk onion to taste salt a little ground black pepper

Cook the potatoes in their skins for about 15 min. almost soft. Peel the pre-cooked potatoes, leave to cool and grate coarsely.

Fry the chopped onion in oil and butter, add the potatoes, add salt and pepper and mix together.

Press the potato mass with a spoon on the bottom of the pan to form a uniform pancake and roast for 10 min. If necessary, loosen the pancake from the bottom so that it does not burn.

After one side is cooked, cover the pan with a plate, flip the pancake onto it, slide it back into the pan and cook again until golden on the other side.

Serve the rösti alone or as a side dish with meat.
