How to make ropa vieja de cocido
Ingredients

Step 1
The first thing to do is peel the onion, shallots and garlic cloves and chop all three very finely with the help of a sharp knife. All this we will put it in a pot to fry with butter and olive oil and also a little salt that will help us to make everything sweat better. We will leave it over low/medium heat so that it caramelizes and acquires a toasted tone, stirring constantly so that it does not overcook. We can cover the pot so that the condensation of the steam helps us to prevent this from happening.
Step 2
While our sofrito becomes a reality we will chop all the meats left over from the stew: blood sausage (it is usually the protagonist of the ropa vieja), chicken, pork, bacon, bacon, ham and even chorizo or blood sausage if we want. We will also chop the already cooked carrot that we have left over, if it has.
Step 3

All that remains is to fry the eggs when you are going to enjoy the ropa vieja. To do this, put a frying pan with plenty of extra virgin olive oil on the fire and, when it starts to smoke, add the eggs one by one. The secret is to leave them in the oil, without touching, for 45 seconds. And then remove them with a skimmer and very carefully, drain them slightly of oil and place them on top of the old clothes.
