Root chips
A festive and crispy side dish is like something from a fine restaurant. Root chips are an excellent starter with artichoke mayonnaise. Try myös instead of fries for a burger.
Ingredients for four
1 small swede 3 carrots 1 parsnip 1 small celeriac olive oil salt pepper
Peel and rinse the root vegetables.
Cut them into thin shavings of a millimetre. Mandolin is a tough game.
Place the root vegetables on a sheet of buttered paper, drizzle with olive oil and mix. Sprinkle a little salt and pepper on top. Bake in the oven at 180 degrees. Cook the root vegetables with a spatula for 10 minutes and when they are really crispy (let burn). It takes 1-1.5 hours to cook, so the root vegetables are not fast food. Add salt and pepper to taste and serve.
