Roasted veal liver hash

Scraped liver mixed with bread, egg yolks and egg white snow, baked under the grill.

Ingredients:

Soups for 4 people: 250 g of calf (poultry) liver 60 g of aged buns 50 g of butter 2 pcs of egg 2 pcs of egg ground pepper salt breadcrumbs to line the bowls butter to grease the bowls

Procedure:

1. Slice the blanched liver and soak it in water and mash it after soaking
3. Beat the softened butter until foamy, add the liver, the squeezed mashed buns, egg yolks, salt, ground pepper and mix well
4. Stir in the stiff egg white mixture
5. Divide the batter into four baking dishes, greased with butter and dusted with breadcrumbs and bake briefly under the grill or in a very hot oven.
