Roasted Beetroot Served with Goat Cheese

Red beetroot baked in foil in the oven, cold sliced, then marinated, served with goat cheese and toasted baguette.
Ingredients:
Procedure:
1. Wash larger beets or small beets but leave whole
2. Place on foil, drizzle with a little oil and wrap the beets thoroughly with the foil (wrap the small ones separately!)
3. Put them in an oven heated to 160 °C for 1,5-2 hours (larger beets can be baked for up to 2 hours, small beets can be baked for 50-60 minutes)
4. Cut the cooled beetroot or beets into slices, put them in the marinade and let them marinate for at least 1 hour (prepare the marinade by mixing the above ingredients for the marinade)
5. Finally, season the beet slices with salt and pepper on a plate and serve with the goat cheese chunks and a baguette toasted on a dry frying pan or contact grill.
Recommendation:
The plate can be garnished with green parsley.
