Roasted asparagus with Italian speck and Tre corti cheese

Horseradish has been considered an effective aphrodisiac since the times of ancient Greece and Rome, having a positive effect on male potency and fertility – its phallic shape is telling! The young shoots are particularly potent and are also the most delicious. It originated in the Orient, but today it is also a favourite delicacy of Europeans.

Ingredients:

1 bunch of green asparagus 100 g of Tre Corti or Gran Moravia cheese 100 g Italian Speck, thinly sliced extra virgin olive oil for brushing the baking dish salted water

Procedure:

  • Gently peel the tough ends of the asparagus. Place the asparagus in a pot of boiling salted water and cook for about 5 minutes. The asparagus must remain crisp. Then immediately cool it in ice water, this way the asparagus will retain its fresh green color.
  • Wipe the baking dish lightly with olive oil.
  • Wrap each asparagus stem with Italian speck. Arrange side by side in the baking dish. Grate the Tre Corti cheese (Gran Moravia can also be used) over the asparagus and finally drizzle with olive oil.
  • Bake in the oven at 180°C until the cheese is lightly golden.
  • Recommendation:

    Serve with baguette.
