Crunchy duck is a fantastic delicacy.

Salt the duck inside and out …

Prepare the stuffing – fry the onion chopped finely and let it cool down . Mix the roast. I cut the croissants into cubes and soak them in lukewarm water and wring them out. Add the whole egg . Next add lots of parsley, marjoram , salt and ground black pepper…… and mix everything well . Add more seasoning as needed.

Fill the duck with the prepared stuffing and “fix” from both sides with needles. Sprinkle it with ground cumin and put it in a slow oven at 150 degrees Celsius. Bake for about 3,5 hours.

During baking, pour off the fat, and also baste with the fat. Then surround with the rest of the filling,let bake for about 20 min. covered.

Bake the duck uncovered for the last 10 mins – it will brown beautifully. Baking time – 4 hrs. / 150 st.

Supplement: braised red cabbage and homemade dumplings.
