Roast duck with poppy seed stuffing and rosehip cabbage

It’s interesting that we’ve become accustomed to the fact that every food has a typical taste, but also a consistency. We expect a roast goose to have a crispy and tender skin. Even whole poppies have a nice crunch. That is why they are a culinary match. Another variety you can try in the kitchen is poppy seed stuffing or rosehip cabbage. You will also do something for your health, because poppy seeds help to lower blood pressure and have a beneficial effect on the immune system. It is a great source of energy, which is good for everyone during the cold, autumn days. Cabbage is also not a random side dish. Insoluble fiber helps maintain a healthy digestive system by promoting bowel movements, increasing beneficial bacteria in the gut and aiding digestion. So if you want to get some new inspiration, try roast duck with poppy seed stuffing and rosehip cabbage.

Ingredients:

Rule for 4-6 people: 1 pk kachna 10 pk roller 8 pcs roller 250 ml of milk 600 g red sterilised cabbage 3 tbsp of rosehip marmalade 2 tablespoons of whole poppy seeds 1 tablespoon cumin 1 tbsp salt 1 tsp of allspice 1 large handful chopped chives pepper

Procedure:

  • Wash the duck, pat dry, salt thoroughly inside and out and sprinkle with cumin. Cover with foil and roast in a preheated oven at 180 °C for half an hour. Then reduce the temperature to 120 °C and bake for about 5 hours. After five hours, remove the foil, increase the temperature to 180 °C and bake for another half hour to get a nice golden and crispy crust. The roasting time always depends on the size of the poultry.
  • While the duck is roasting, prepare the stuffing. Cut the rolls into cubes and cover with milk. Whisk your eggs into this mixture and add salt, pepper, whole poppy seeds, gingerbread spice and chives. Stir everything together and place on a baking sheet with baking paper. You can also add almond flakes to the stuffing.
  • Bake in a preheated oven at 180 °C for about 30-40 minutes.
  • Stew the cabbage in a pot until soft. Towards the end, stir in the rosehip jam and remove from the heat.

    The basis of any good meal is good quality ingredients. In the case of poppy seeds in stuffing, it is more about the spices that scent the food and add an unmistakable aroma.
