Roast beef brisket

The brisket requires a very long cooking time. However, it is worth the effort. A properly cooked roast beef brisket will make the sky roar.
Ingredients for 10
3-4 kg:4 teaspoons salt 3 teaspoons sugar 1 tablespoon black pepper 3 tablespoons olive oil
Mix the dry spices. Trim off the excess fat from the beef brisket, but leave a nice layer of fat on the surface. Use a knife to draw out the criss-cross cuts in the fat.
Drain the seasoning mixture all over the meat.
Soak the beef brisket in olive oil and wrap it in a piece of foil. Place the meat in the fridge overnight to season.
Roast the beef brisket in a 100°C oven for 10-12 hours.
Just before serving, cook the meat until still hot, slice quite thinly and pat down.
Right before serving, cook the meat until tender.
