Risotto with tofu cheese

ingredients

170 g mushrooms 1 pk onion 120 g rice pk salt pk ground black pepper 5 dl vegetable broth 100 g smoked tofu cheese pk parsley

Fry the onion chopped finely and the mushrooms in hot oil. Then add the cooked and drained rice. And roast for a few more minutes.

Salt, pour in the prepared broth and add water if the mixture is not well watered. Stir the mixture well, cover and simmer for about 10-15 minutes.

Finally add the diced tofu. Arrange the risotto on a plate and garnish with the spinach.
