Risotto with horseradish

The curly-leaved hawkweed belongs to the autumn mushrooms. It is a mushroom with an exotic shape and a cartilaginous consistency, suitable for mixtures, risottos, salads … It can be substituted for the mushroom ear, which has a similar consistency.

Procedure:
1. Clean the asparagus, chop finely, cook the rice, according to the instructions on the package, until tender
2. Heat the oil in a pan, add the chopped onion, the snapper, the English bacon, the paprika and simmer everything until soft
3. When the mixture is soft, add the crumbled broth for seasoning and stir
4. Stir the simmered mixture with the cooked rice and add the sterilized peas, season with salt and pepper
