Ricotta and cherry tomato muffins with Thermomix

Here is the recipe for ricotta and cherry tomato muffins with Thermomix, tasty savory muffins easy and simple to make for an appetizer or an aperitif.

Ingredients:

125 g ricotta 2 eggs 60 ml oil 200 g flour 80 g grated parmesan salt and pepper to taste cherry tomatoes and oregano to taste 10 g baking powder

Preparation:

Put the ricotta and eggs in the bowl, then set 20 seconds on speed 3.
Add the oil, parmesan cheese then set 30 seconds on speed 4.
Then add the flour, baking powder, salt and pepper then set 30 seconds on speed 4.
Pour the mixture into muffin tins, filling 3/4 of each tin.
Cut the cherry tomatoes in half then place 1/2 tomatoes in each tin and sprinkle with oregano.
Preheat the oven to 180°C for 30 minutes.
