3 liters broth 800 g fresh mushrooms 200 g fat 150 g plain flour 100 g onion 1 g cumin 10 g sweet paprika 30 g salt 10 g parsley 20 g soup seasoning
step
1. Fry the finely chopped onion in one quarter of the fat, add the paprika, chopped cumin, sliced, well cleaned mushrooms and simmer under a lid, stirring occasionally, until tender. 2. Thicken the broth with a light roux made from the remaining fat and flour and cook over a low heat for 1 h. 3. Strain the cooked soup through a sieve, add the stewed mushrooms and simmer briefly. 4. Finally, add finely chopped parsley, soup seasoning, season with salt if necessary and do not boil.
