Rice salad with mung beans

100 g rice Natural 50 g mung beans 1 pk carrots 1 pk apple 1 tsp honey 1 tsp herb salt 1 tsp tarragon 3 tbsp olive oil 1 tbsp white balsamic vinegar

Simple salad suitable as a main dish.

Soak the mung beans in water for an hour. Drain the water add the rice and pour 400ml boiling water over. Season with salt and leave to cook on a low heat for about 30-40 minutes until the rice is cooked

Basil salt can be used bought or prepared at home. Coarse sea salt in a mortar, rub a little, add dried parsley, celery seed, cumin, thyme… or any other combination.

Let the cooked rice and mungo cool. Roughly grate the carrot and apple.

Mix honey, vinegar, oil and pour this dressing over the salad, season with herb salt, add tarragon. Let the salad rest for at least 30 minutes.

Salad can be served as a side dish with meat but it is also suitable as a main dish…You can replace the natural rice with any other rice.
