Rice recipes with vegetables no chicken or meat

First up is a recipe for Curried Rice and Vegetables. This dish is packed with flavor from the curry powder, turmeric, and cumin. It’s also got plenty of healthy veggies like carrots, peas, and potatoes. To make it, you’ll need:

1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 tablespoon curry powder
1 teaspoon turmeric
1 teaspoon ground cumin
Salt and pepper
1 cup white rice
2 cups vegetable broth
1 cup diced carrot
1 cup frozen peas
1 cup diced potatoes

To make this dish, start by heating the oil in a large pot over medium heat. Add the onion and garlic and cook until softened. Then, add the curry powder, turmeric, cumin, salt and pepper. Stir everything together and cook for one minute. Next, add the rice and vegetable broth. Bring to a boil, reduce the heat to low, cover and simmer for 20 minutes. After 20 minutes, add the carrots, peas and potatoes. Cover and cook for an additional 10 minutes, or until the vegetables are tender. That’s it! Serve this Curried Rice and Vegetables hot, topped with a dollop of plain yogurt or coconut milk if desired.

This next recipe is for a flavorful Fried Rice with veggies. It’s a great way to use up leftover rice, and add in whatever veggies you have on hand. To make it, you’ll need:

– 1 tablespoon olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 1 teaspoon ground ginger
– 1/2 teaspoon red pepper flakes
– Salt and pepper
– 3 cups cooked white rice
– 1/4 cup soy sauce
– 1/4 cup vegetable broth
– 2 carrots, peeled and diced
– 1 bell pepper, diced
– 1/2 cup frozen peas
– 2 green onions, thinly sliced

First, heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened. Then, add the ginger and red pepper flakes. Season with salt and pepper to taste. Stir everything together and cook for one minute.
Next, add the cooked rice and toss to combine. Pour in the soy sauce and vegetable broth. Cook for one minute to allow the liquid to absorb into the rice. Add the carrots, bell pepper and peas. Cook for 3-5 minutes, or until the vegetables are tender. Lastly, stir in the green onions. Serve hot with additional soy sauce or chili paste if desired.

Start by adding the cooked rice to a bowl. Top with the sweet potato, kale, black beans and cheese. Then, add the avocado and green onion. Drizzle with Sriracha sauce to taste. That’s it! This Veggie Rice Bowl is easy to make and so satisfying
