Rice Eggs

Egg shaped from a mixture of rice, tomatoes, eggs, spices and mozzarella, coated in breadcrumbs and fried in oil.

Ingredients:

150 g Rice 150 g Mozzarella 4 pcs tomatoes 2 pcs eggplant 2 tbsp grated parmesan nutmeg breadcrumbs salt

Procedure:

1. Cook the rice with peeled and crushed tomatoes and a pinch of nutmeg
2. Stir in the egg and salt before it cools down
3. Scoop out a bit of the rice mixture with a spoon, squeeze in a dollop of mozzarella and cover with the mixture with the other spoon
4. Cover the resulting rice egg in breadcrumbs mixed with Parmesan cheese and fry immediately in hot fat.
