Rhubarb salad
ingredients
2 stalks rhubarb 2 pcs hard boiled egg 1 pcs romaine lettuce 2 pcs tomatoes 1/2 pcs red pepper 1/2 pcs red onion 1/2 pcs lime 1 tbsp mustard 2 tbsp olive oil pcs black pepper ground,salt 1 tbsp honey 1 packet of cheese balls unsmoked

An unconventional vegetable salad with rhubarb will please everyone, after all, it’s its season.

Wash, peel and cut the rhubarb into small pieces. Put it to boil in a little sweetened water for about 1 minute, strain and rinse under cold water.

Hard-boil the eggs and cut them into small pieces when cooled, cut the peppers into small cubes, cut the tomatoes into marigolds. Chop the onion finely and set some aside. Disassemble the romaine lettuce into leaves and wash them.

Prepare the dressing. Pour the oil into a bowl, add the lime juice, black pepper, salt, mustard and honey. Stir, add the chopped eggs, onion and chopped peppers, and finally gently stir in the rhubarb.

Place the lettuce leaves, tomato wedges, onion slices on a plate and top with the prepared salad mixture. Top with cheese balls. Enjoy!
