Rhubarb pie the old-fashioned way

The dough has been used to make successful pies from a wide variety of fruits and berries. For example, rhubarb pie can be made with this recipe as if you were at grandma’s house.

Ingredients for 8 people

175 g margarine 1.5 dl sugar 3 dl flour 1 egg 0.75 dl milk 1 tsp baking powder 1 tsp vanilla sugar 5 handfuls of rhubarb

Melt the fat and mix in a bowl with the sugar. Add the flour (no more baking powder). Add the flour slowly, as the dough should not become too dry at this stage.

Put aside a coffee cup of dough; sprinkle it over the top of the finished rhubarb pie. Now add the egg, milk, baking powder and vanilla sugar to the dough bowl. Mix the dough vigorously until smooth. The dough should be runny at this stage, i.e. it should not stick to the sides of the pan, but it should not be too wavy.

Place the dough in a greased pie dish and sprinkle with the chopped rhubarb. Sprinkle the sugar over the rhubarb and set aside the dough from the beginning.

Bake the rhubarb pie at 200°C for about 30 minutes. The ovens vary, so you should check the cooking time. The sugar is usually burnt off.

The rhubarb pie is best served with a cold custard or custard sauce after a short soak.
