Refreshing Raspberry Soup

If you are not too fond of soups on hot days, you should change your mind! This refreshing cream is also a dessert full of vitamins.

Ingredients:

4 cups of fresh organic raspberries 1 cup bio sour cream 1/4 cup bio cranberry juice or white grape juice 1/2 to 3/4 cup bio sugar (if raspberries are sweet enough, you can cut back) 2 tablespoons of finely chopped organic mint

Procedure:

  • Crush the raspberries finely with the juice and sugar.
  • Then strain the mixture to get rid of the seeds.
  • Pour the prepared soup into bowls. Add the cream and stir gently to make a beautiful combination of colours. Let cool.
  • Before serving, garnish with a few more drops of heavy cream, mint leaves and raspberries or other small fruits.
