If you are not too fond of soups on hot days, you should change your mind! This refreshing cream is also a dessert full of vitamins.
Ingredients:
4 cups |
of fresh organic raspberries |
1 cup |
bio sour cream |
1/4 cup |
bio cranberry juice or white grape juice |
1/2 to 3/4 cup |
bio sugar (if raspberries are sweet enough, you can cut back) |
2 tablespoons |
of finely chopped organic mint |
Procedure:
Crush the raspberries finely with the juice and sugar.
Then strain the mixture to get rid of the seeds.
Pour the prepared soup into bowls. Add the cream and stir gently to make a beautiful combination of colours. Let cool.
Before serving, garnish with a few more drops of heavy cream, mint leaves and raspberries or other small fruits.
