Red lentils with apple, raisins and coconut

Lentils as a main course or side dish. With the taste and aroma of coconut, rolled apple, leek and raisins.

Ingredients:

1 cup red lentils 350 ml coconut drink 80 g raisins 2 handfuls of leeks 4 tbsp grated coconut 2 tbsp oil 1 tsp curry spices 1/2 tsp

td>ground cinnamon 1/2 tsp of turmeric 1 pk onion finely chopped 1 pk larger apple salt

Procedure:

1. Rinse the lentils with cold water and pour the coconut drink over the lentils so that it exceeds them by about a centimeter
2. Add the curry spices, cinnamon and turmeric, and cook on low heat under a lid, stirring occasionally, for about 15 minutes until the coconut drink evaporates
3. Fry the onion in the oil, then add the leek cut into thin noodles and the diced and peeled apple
5. When the leek wilts, pour in about a deciliter of coconut drink
6. Heat briefly and add this mixture to the lentils, which have been transferred to a larger pan
7. Toss together with the remaining spices and the raisins that have been steamed in hot water
