For this recipe, we’ll be using leftover roast beef. But you can really use any type of cooked meat that you have on hand. Chicken, pork, turkey…the possibilities are endless.

Re-Cooked Roast Beef Recipe
Ingredients:
-1 pound cooked roast beef, sliced into thin strips
-1 tablespoon olive oil
-1 onion, diced
-2 cloves garlic, minced
-1 green pepper, diced
-1 can diced tomatoes
-1 teaspoon dried oregano
-1 teaspoon dried basil
-1/2 teaspoon salt
-1/4 teaspoon black pepper
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the onion, garlic, and green pepper, and cook until softened.
3. Add the diced tomatoes, oregano, basil, salt, and black pepper, and cook for another minute.
4. Add the roast beef strips and cook until heated through.
5. Serve over rice or pasta.
