Ingredients:
1 whole chicken, cut into pieces
1 onion, chopped
1 green pepper, chopped
1 red pepper, chopped
1 tablespoon olive oil
2 tablespoons lime juice
2 tablespoons chopped cilantro
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
1 (14.5 ounce) can diced tomatoes, undrained
1 (8 ounce) can tomato sauce
1/4 cup dry white wine
1/4 cup chopped green olives
1/4 cup raisins
Instructions:
1. In a large pot or Dutch oven, sauté chicken in oil over medium-high heat until browned.
2. Add onions, peppers, lime juice, cilantro, salt, black pepper, cumin and garlic powder. Stir in tomatoes, tomato sauce and wine.
3. Bring to a boil, reduce heat to low and simmer, covered, for 30 minutes.
4. Stir in olives and raisins and simmer for an additional 10 minutes.
5. Serve over rice or pasta.
