Recipe to make puff pastry without cornstarch
Last Updated on
Are you in the mood for some homemade puff pastry, but don’t have any cornstarch on hand? No worries! This recipe doesn’t require any cornstarch, and it’s just as delicious. All you need is:
-1 1/2 cups all-purpose flour
-1 teaspoon salt
-1 cup (2 sticks) cold unsalted butter, cut into cubes
-6 to 8 tablespoons ice water
Instructions:
1. Combine flour and salt in a large bowl. Add butter, and using a pastry blender or your fingers, cut the butter into the flour until it resembles coarse crumbs.
2. Add ice water, 1 tablespoon at a time, and mix with a fork until the dough comes together. Be careful not to add too much water – you want the dough to be moist, but not wet.
3. Once the dough has come together, divide it in half, and shape each half into a disc. Wrap each disc in plastic wrap, and refrigerate for at least 30 minutes (and up to 2 days).
4. When you’re ready to use the dough, remove it from the refrigerator and let it sit at room temperature for 10-15 minutes. Then, on a lightly floured surface, roll out the dough to desired thickness.
