Last Updated on
Pozole is a traditional Mexican stew made with hominy and meat (usually pork). There are many different types of pozole, including red, yellow, white, and green. Green pozole is typically made with tomatillos, cilantro, and green chilies. However, it is possible to make green mole pozole without green chilies.
The ingredients you will need for this dish are: hominy, pork (or chicken), tomatillos, garlic, onion, cilantro, epazote (a Mexican herb), cumin, salt, pepper, and a little bit of oil for frying. The mole sauce is made with: chili peppers, pumpkin seeds, sesame seeds, peanuts, plantain, bread, garlic, cloves, cinnamon, allspice, anise seeds, and chicken broth. As you can see, there are many ingredients involved in this dish!
The first thing you need to do is make the mole sauce. If you have never made mole before, don’t worry – it’s not as difficult as it sounds. Start by roasting the chili peppers, pumpkin seeds, sesame seeds, peanuts, plantain, garlic, cloves, and cinnamon in a dry skillet over medium heat. Once everything is roasted and fragrant, transfer to a blender or food processor and add the chicken broth. Blend until smooth and set aside.
Next, fry the onions and garlic in a little bit of oil until softened. Add the pork (or chicken) and fry until browned. Now add the hominy and tomatillos and cook for a few minutes until the tomatillos start to soften. Finally, add the mole sauce and cumin and simmer for 30 minutes or so.
Green mole pozole is typically served with shredded cabbage, radishes, lime wedges, and tortilla chips. However, you can serve it however you like! I hope you enjoy this recipe
