Making your own delicious bisque is easier than you may think! With just a few ingredients and a little bit of time, you can create a velvety smooth soup that’s perfect for a winter meal. Here’s what you’ll need to make our bisque recipe:
1 tablespoon olive oil
1 onion, diced
3 cloves garlic, minced
1 pound shrimp, peeled and deveined
1 tablespoon tomato paste
1 cup white wine
3 cups chicken stock
1 bay leaf
½ teaspoon dried thyme
1 (14.5 ounce) can diced tomatoes, undrained
1 cup heavy cream
Salt and pepper to taste
To make the bisque, start by heating the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Then, add the shrimp and cook until pink, about 3 minutes. Stir in the tomato paste and cook for 1 minute. Pour in the white wine and cook until reduced by half. Add the chicken stock, bay leaf, thyme, diced tomatoes with their juices, and cream. Bring the soup to a simmer and cook for 10 minutes. Remove the bay leaf and season the bisque with salt and pepper to taste.
