Recipe to make a vegan oil-free puff pastry using frozen pureed avocado
When it comes to vegan pastries, one of the hardest things to find is a good recipe for puff pastry. Puff pastry is traditionally made with butter or oil, neither of which are vegan. But never fear, there is a way to make a vegan version of this classic pastry!
The key to a good puff pastry is in the layering. You need to create thin sheets of dough that will puff up when baked. The best way to do this is to use a food processor to create a dough made from frozen, pureed avocado. Avocado has a high fat content, which will help create the layers you need for puff pastry.
To make the dough, simply combine equal parts flour and avocado in the food processor and pulse until combined. Then, turn out the dough onto a sheet of plastic wrap and chill in the fridge for at least 30 minutes. Once the dough is chilled, you can begin rolling it out.
When rolling out the dough, be sure to flour your work surface well. The dough can be sticky and difficult to work with otherwise. Once you have rolled it out to your desired thickness, use a knife or pizza cutter to cut it into desired shapes. Then transfer the shapes to a baking sheet lined with parchment paper and bake at 400 degrees until golden brown and fluffy.
This vegan puff pastry is perfect for all sorts of pastries, from turnovers to cream puffs
