Recipe to make a Cobb salad for dinner

Spring is here and that means it’s time to start thinking about light, refreshing salads for dinner. A Cobb salad is the perfect meal when you’re craving something healthy but satisfying. This salad is packed with fresh ingredients like tomatoes, hard-boiled eggs, avocado, and bacon. It’s perfect for a quick and easy weeknight meal.
To make a Cobb salad, you will need:
– 1 head of romaine lettuce, chopped
– 1/2 lb. of bacon, diced
– 2 hard-boiled eggs, sliced
– 1 avocado, diced
– 1/2 cup of crumbled blue cheese
– 2 tomatoes, diced
Start by cooking the bacon in a large pan over medium heat. Once it’s crisp, remove it from the pan with a slotted spoon and set it aside on a paper towel-lined plate. Add the chopped lettuce to the pan and cook until it’s wilted. Remove from the heat and let it cool.
In a large bowl, combine the cooked bacon, lettuce, eggs, avocado, blue cheese, and tomatoes. Season with salt and pepper to taste. Serve immediately.
