Ingredients:
-1 cup cooked quinoa
-1 cup chopped kale
-1 roasted red pepper
-1/4 cup diced red onion
-1 clove minced garlic
-1 tbsp. olive oil
-1 tbsp. balsamic vinegar
-1/4 tsp. salt
-1/4 tsp. black pepper
Instructions:
1. Preheat oven to 375 degrees.
2. In a large bowl, mix together cooked quinoa, chopped kale, diced red onion, roasted red pepper, garlic, olive oil, balsamic vinegar, salt and black pepper.
3. Spread mixture onto a baking sheet and bake for 20 minutes.
4. Enjoy as is or serve with your favourite protein source.
