Recipe of tomato bisque

This silky smooth bisque is the perfect comfort food. It’s easy to make and can be served either hot or cold. The key to getting that perfect bisque texture is to blend it until it’s completely smooth. I like to use a immersion blender for this, but you could also use a regular blender. Just make sure to let it cool slightly before blending so that you don’t accidently burn yourself.
Ingredients:
1 tablespoon olive oil
1 onion, diced
4 cloves garlic, minced
4 cups chicken or vegetable broth
4 cups diced tomatoes, with their juice
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon black pepper
Instructions:
In a large pot or Dutch oven, heat the oil over medium heat until hot.
Add the onion and garlic and cook until both are tender, stirring occasionally.
Add the broth, tomatoes, sugar, salt, and pepper. Bring to a simmer and cook for 10 minutes.
Using an immersion blender, blend the soup until it’s completely smooth. You could also use a regular blender for this, but let the soup cool slightly first so you don’t burn yourself.
Serve hot or cold. Enjoy!
