Recipe for zucchini medallions and pasta
What could be more mouthwatering than fresh zucchini medallions lightly seared and served over a bed of pasta with a sprinkle of Parmesan cheese? This dish is so easy to make and can be on the table in under 30 minutes.
To make the zucchini medallions, you will need:
-1 zucchini, sliced into thin medallions
-1/4 cup all-purpose flour
-1 teaspoon garlic powder
-1/4 teaspoon paprika
-1/4 teaspoon salt
-1/4 teaspoon black pepper
-1 Tablespoon olive oil
For the pasta, you will need:
-8 ounces uncooked pasta
-1 Tablespoon olive oil
-1/4 cup Parmesan cheese, shredded
Instructions:
Preheat oven to 400 degrees F. Place a large skillet over medium-high heat and add olive oil. In a shallow bowl, combine flour, garlic powder, paprika, salt and pepper. Dip zucchini medallions in the flour mixture, making sure each one is evenly coated. Add zucchini to the hot skillet and cook for 2-3 minutes per side, or until golden brown. Transfer to a baking sheet and bake for 10 minutes.
Cook pasta according to package instructions. Drain and return to the pot. Add olive oil and Parmesan cheese, stirring until cheese is melted.
Serve zucchini medallions over pasta and enjoy!
