This soup is flavorful and hearty, made with fresh tomatoes and a few simple ingredients. It’s perfect for a chilly day or as a starter to a meal. The best part is that it’s easy to make and can be ready in under an hour.
Here’s what you’ll need:
6-8 ripe tomatoes, chopped
1 onion, chopped
4 cloves garlic, minced
1 tablespoon olive oil
4 cups chicken or vegetable stock
1 teaspoon sugar
Salt and pepper to taste
Instructions:
In a large pot or dutch oven, heat the olive oil over medium heat. Add the chopped onion and garlic and cook until softened, stirring occasionally.
Add the chopped tomatoes and sugar, and season with salt and pepper. Cook for about 10 minutes, until the tomatoes are slightly broken down.
Add the chicken or vegetable stock, bring to a simmer, and cook for 15-20 minutes.
Use an immersion blender to blend the soup until smooth, or transfer to a blender in batches and blend until smooth.
Serve hot, with some crusty bread for dipping
