-3 cloves of garlic, minced
-1 tablespoon of olive oil
-1 teaspoon of salt
-1/2 teaspoon of black pepper
-1/4 teaspoon of sugar
-1/4 teaspoon of dried oregano
-1/4 teaspoon of dried basil
-1/4 teaspoon of fennel seeds
-1 bay leaf
To make the sauce, simply combine all of the ingredients in a large saucepan over medium heat. Stir occasionally, and simmer for about 30 minutes or until the sauce has thickened. Discard the bay leaf before serving.
For the apple cake, you’ll need:
-1 cup of all-purpose flour
-1 teaspoon of baking powder
-1/4 teaspoon of baking soda
-1/2 teaspoon of cinnamon
-1/4 teaspoon of nutmeg
-1/2 cup of unsalted butter, at room temperature
-3/4 cup of sugar
-2 eggs, beaten
-1 teaspoon of vanilla extract
-2 cups of apples, peeled and grated
Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 9×13 inch baking pan.
In a medium bowl, combine the flour, baking powder, baking soda, cinnamon, and nutmeg. Set aside.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. Gradually add the flour mixture to the butter mixture, mixing just until combined. Stir in the grated apples. Pour the batter into the prepared pan.
Bake for 45 minutes or until a toothpick or cake tester comes out clean when inserted into the center of the cake. Allow the cake to cool for 10 minutes before serving. Serve with caramel sauce.
