Recipe for saving leftover fish in puff pastry

Do you often find yourself with leftover fish? If so, this recipe is for you! With just a few ingredients, you can easily turn your leftover fish into a delicious and elegant meal.
To start, you will need:
1 puff pastry sheet
1/4 cup shredded Gruyere cheese
1 egg
1 tablespoon Dijon mustard
1 tablespoon milk
1 tablespoon chopped fresh thyme
Preheat your oven to 400 degrees. Line a baking sheet with parchment paper and set it aside.
In a small bowl, whisk together the egg, milk, Dijon mustard and thyme. Set this mixture aside.
Next, roll out the puff pastry sheet on a lightly floured surface. Once it is rolled out, spread the shredded cheese over the surface. Then, place the leftover fish on top of the cheese. Starting at one end, roll up the pastry like you would a jelly roll. Transfer the rolled-up pastry to the prepared baking sheet and brush it with the egg mixture.
Bake for 25-30 minutes or until the pastry is golden brown and cooked through. Slice and serve warm
