Recipe for salmon and prawns with avocado sauce
Here’s a delicious and easy recipe for salmon and prawns with avocado sauce. This dish is healthy and packed with flavour, and takes less than 30 minutes to make. It’s perfect for a weeknight dinner or entertaining guests.
For the salmon and prawns:
4 salmon fillets
1/2 teaspoon smoked paprika
1/4 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon sea salt
Freshly ground black pepper
1 tablespoon olive oil
16 large prawns, peeled and deveined
For the avocado sauce:
2 ripe avocados
1/2 lime, juiced
1 clove garlic, minced
1/4 teaspoon sea salt
Freshly ground black pepper
1/4 cup chopped fresh cilantro
1/4 cup sour cream or Greek yogurt (optional)
Instructions:
Preheat oven to 425 degrees F (220 degrees C).
In a small bowl, combine smoked paprika, cumin, garlic powder, 1/4 teaspoon of salt, and black pepper. Rub the spice mixture all over the salmon fillets.
In a large skillet over medium-high heat, heat olive oil. Add the salmon fillets and cook for about 3 minutes per side, or until cooked through. Remove the salmon from the skillet and set aside.
In the same skillet, add the prawns. Season with salt and pepper and cook for about 2 minutes per side, or until opaque. Remove from heat.
To make the avocado sauce, combine avocados, lime juice, garlic, 1/4 teaspoon of salt, black pepper, cilantro, and sour cream or yogurt in a food processor or blender. Blend until smooth.
Serve the salmon and prawns with the avocado sauce.
