Recipe for rice veggie bars to make for lunch snacks

If you’re looking to mix up your lunchtime snacks, these rice veggie bars are a delicious and easy option! Made with just a few simple ingredients, they come together quickly and can be tailored to your individual taste. I like to add in extra veggies like kale or shredded carrots, but you can really add in whatever you like. These are also great for on-the-go snacks or for packing in lunchboxes.
Ingredients:
1 cup cooked rice
1/4 cup shredded cheese
1/4 cup diced veggies (I like to use kale or carrots)
1 egg
Salt and pepper to taste
Instructions:
1. Preheat oven to 350 degrees.
2. In a bowl, mix together cooked rice, shredded cheese, diced veggies, egg, salt and pepper.
3. Spray a muffin tin with cooking spray.
4. Spoon mixture into muffin tin, pressing down slightly.
5. Bake for 15-20 minutes, or until golden brown.
